Week 3 – Spicy sweet potato salad and a ‘fonut’ donut

I’m a big fan of sweet potato, so it didn’t take long to feature in this experiment. This is from Leon’s ‘Fast Vegetarian’ book. I’m also a big fan of Leon’s restaurants for a quick and healthy breakfast, lunch and dinner (yes, I’ve done all three, but not in the same day – yet), and they make a mean sweet potato ‘fonut’ – here’s a nice pic, just because I love donuts and this one is made of sweet potato with a pistachio topping. Took me an age to hunt this down as they ran out every time I went in, but it was worth it when I finally got my hands on one.

But back to the recipe…

This is a sweet potato salad with ginger, chilli and coriander. I followed the recipe (with the additions of carrots and coriander seeds) but it was ‘muy caliente’ and completely blew my mouth off. Had to cool it down with creme fraiche, so go easy on the chilli. But a good side dish or a salad for lunch #aldesko.

Week3

Steam 500g of sweet potato and while that’s happening, saute 4-5 cloves of garlic and a 5cm piece of peeled ginger. Once the potatoes are done, add them to the garlic and ginger and add chopped coriander, the chilli flakes, and some sea salt. Finish with an extra tablespoon of olive oil. Really simple, so not entirely sure where I went wrong – perhaps just using a very strong chilli powder. Would go for flakes or fresh chilli next time.
